I LOVE cilantro … so when I saw this recipe on a fellow Nest What’s Cooking? forum the other day, I KNEW I had to make it. And I wasn’t disappointed.
Here’s the recipe with my very few modifications:
Arroz Verde
(From Ally @ Culinary Infatuation)
2 cups stock (I used veg. stock since that’s what I had on hand)
1 cup rice
1 cup chopped cilantro
1 tsp. onion flakes
1 tsp. chopped garlic (or 1-2 cloves)
1 tsp. cumin
salt and pepper to taste
Warm the stock … then add everything into pot and bring to boil. Cover and let simmer for 25 minutes.
Or use rice cooker (I’m trying that next time!)
