So, it’s my 100th post .. and I certainly didn’t think I’d be posting about potatoes. In fact, I’ve spent the week avoiding blogging in the hopes of having something BIG to post about for my 100th. But I couldn’t wait to share these with you, they’re THAT good. Seriously. I’m eating them right now … cold … 2 hours after dinner .. they won’t last throught the night.
Crash Hot Potatoes are a recipe I found on Pioneer Woman Cooks, a totally funny, inspiring cooking blog. Apparently it’s an Australian dish, but the best thing about these is that they’re SOOOO easy. How easy? SOOO easy!
All you need are baby red potatoes, olive oil, kosher salt and herbs of your choosing. See, so simple!
Here’s what you do:
Bring a pot of salted water to a boil and add potatoes … boil until tender (mine took about 25 min.)
Place potatoes on baking sheet drizzled with olive oil and lightly mash with potato masher (see PWC’s entry for step-by-step directions and hilarious commentary.)
Brush with olive oil. Sprinkle with kosher salt and herbs … I used dried rosemary on half and Penzy’s Tuscan Sunset (which ROCKED, by the way) on the other half.
Bake at 425 for 20-25 minutes until crispy.
And wa-la – Crash hot potatoes …
