I found this recipe on sparkrecipes.com – a great source for healthier recipes – and thought it sounded easy and good. I was right! (Shocker, I know) This was SO easy and it tasted just like shrimp alfredo … only without the guilt! Even Scott said it was good – and I always thought he wasn’t a big fan of alfredo sauces. I think this would be great with some chicken or even real crab. This is definitely a keeper for me.
Garlic shrimp pasta

8 oz. pasta (I used rotini)
8 oz. shrimp
5 cloves garlic
1/4 cup onion, diced
8 oz. cream cheese (I used full-fat for flavor)
1 cup chicken broth
1/2 cup parmesan cheese
Cook pasta according to directions.
While pasta is cooking, add shrimp, garlic and onion to large skillet and cook until shrimp is almost done.
Add cream cheese and chicken broth and cook until cream cheese has melted and it’s mixed well with the broth.
Add parmesan cheese and mix.
Drain pasta and put in bowl. Top with shrimp mix. Serve immediately.
